And That’s the Way the Cookie Crumbles

With a craving for baked goods, no baking powder and no desire to leave the comfort of my home, I did some google-ing and came up with my own cookie concoction. I didn’t measure any of these so the amounts I mention are just gross estimates: I poured about 2/3 of a cup of rolled oats (the quick cooking kind) into a bowl, added around 2-3 tbsps of peanut butter and 3-4 tablespoons of sugar syrup and pure maple syrup (I’m sure it can be substituted with 1/4 cup of sugar). Then I pre-heated the oven to 375 degrees Fahrenheit and mixed the ingredients in the bowl. Since I didn’t have a cookie sheet, I just used one of those pans I use to bake cakes. The “batter” made about 5 cookies. I let them bake for about 15 minutes and then let them cool to stiffen a little. To my greatest surprise the cookies actually turned out pretty damn good. They weren’t too hard or too soft. They are very slightly chewy, which is perfect, and they crumble perfectly upon biting. We’ll call them Crumbly Peanut Butter Oatmeal Cookies. There’s a mouthful.
